EASY VEGAN BANANA CUPCAKES


These cupcakes are delicious! They're easy to make, and won't require too much time and effort. A simple banana cupcake with a delicious 'butter' cream icing topped with walnuts. The butter cream is rich enough to make them a real treat, but they're so light and irresistible you won't want to stop at one! I got this recipe from "The Sweetest Vegan" (and adapted it slightly) on YouTube, who has some wonderful recipes I do recommend checking out! Here's the link:

Ingredients needed:

cupcakes:

1 & 1/4 cups of self raising flour
1 teaspoon of ground cinnamon 
3/4 of a banana
1/2 a cup of raw sugar 
2/3 of a cup of almond milk
1/3 of a cup of sunflower or canola oil
1 teaspoon of vanilla extract
a pinch of salt 

cupcake icing:

1/4 (the rest of) a banana 
4 table spoons of nutlex (vegan butter)
1 & 3/4 cups of icing sugar 
a pinch of salt
top with crushed walnuts (optional)

Directions:

cupcakes:

Preheat your oven to 180 degrees c and prepare a non-stick muffin tray.

In a large bowl, whisk together your flour, cinnamon and a pinch of salt.

In a separate smaller bowl, use an electric mixer to cream the banana until it is a "pudding" like consistency. With a wooden spoon, then blend in the raw sugar, almond milk, sunflower/canola oil and vanilla extract.

Gradually mix the wet ingredients in with the dry ingredients until well combined.

Spoon the cupcake batter into the muffin tin, this should make about 10.

Bake for around 20 minutes, using a skewer to check if baked.

Allow them to cool before icing.

cupcake icing:

Cream together the remainder of the banana and the nutlex together in a bowl with an electric mixer until smooth.

Add a pinch of salt, and slowly add the icing sugar to the mix, now mixing with a wooden spoon. Mix until light and fluffy.

Spread onto each cupcake, and sprinkle with crushed walnuts.
